Some people find comfort in ice cream🍦. Chocolate 🍫. Coffee ☕️ .

I find Hatch green chiles comforting.

They represent family.

My parents travel from Oregon to New Mexico every September to visit family, and can chile.

Whenever we have a family family get together you can count on a dish of green chile enchilada.*

My Mom grew up in the Hatch valley. My parents met not far from there. My grandparents married and lived there for more than fifty years.

And some of my favorite foods are made with Hatch green chiles.

So this is abundance. This is comfort. This represents family.

For variations/additions:

~Use one can of mushroom soup and one can of cream of chicken.

~Use the listed mushroom soup, but add a cup of sour cream.

~Fry the corn tortillas in bacon grease lightly–just long enough to warm and soften on both sides–before adding to the casserole.
